Weight ounces, not fluid ounces
This page converts the ounce of weight — the one on a kitchen scale. A fluid ounce measures volume, the space a liquid takes up, and the two are different quantities that unluckily share a name.
They are not interchangeable, and the gap depends entirely on the ingredient. 8 oz of water weighs 227 g and happens to be close to 8 fl oz in volume; 8 oz of flour is the same 227 g but fills far more space. If your recipe measures liquid by volume, use the fluid ounces to cups converter instead.
